Sake heating apparatus

Apparatus to heat sake for sterilization purposes. Includes jakan coils and plate-type heat exchangers which function by using hot water in heat exchange to raise the temperature of the sake indirectly. The internal part of the apparatus in contact with the sake is made of stainless steel. There was a time long ago when sake was put in the pot used when steaming rice and heated directly、but nowadays special sterilizing equipment is used.

In the case of heating sake for bottling, there are two methods. In the first, the sake is filled into the bottle or other container, which is then heated. In the second, the sake itself is heated first before filling. Nowadays, the great majority of facilities use the second method for reasons of economy and efficiency.
