Kasu kansan ritsu

【English】
Conversion rate of sake kasu

When moromi is pressed and divided into seishu and sake kasu, moromi and sake are calculated by volume, whereas kasu is measured by weight. The value kasu kansan ritsu is used to enable effective calculation for the kentei registration. The normal proportion holds 1.1kg of kasu to be equivalent to one litre of sake. This value is used in calculating the ketsugen yield discrepancy which occurs when pressing. The meaning of the value is that dissolving 1.1kg of kasu in sake leads to a one litre increase in volume, not that 1.1kg can be dissolved to give one litre of sake. When calculating for kentei, 1kg of kasu is held to be equivalent to 0.909 litres, rounded down to the nearest complete litre.
